Makes: 4 servings
500gm broccoli, cut into tiny florets
3 tbsp breadcrumbs
¼ cup grated cheddar
For the cheese paste
3tbsp butter
4tbsp plain flour
1 ½ cup of temperate milk
1tbsp mustard paste
½ cup grated cheddar cheese
½ cup parmesan cheese
¼ tsp salt
½ tsp white pepper
1. Softly grease an oven-proof bowl.
2. Boil the broccoli in a saucepan with lightly salted hot water for 5 minutes or until just tender. Use up and then move to the ready dish.
3. To make the cheese sauce, melt the butter in a saucepan over low heat. Mix in flour and cook for 1 minute, or until light and foaming.
4. Take away from heat and slowly stir in milk and mustard. Go back to heat and stir continuously until the sauce boils and thickens to an even constancy Strain if desired to take away lumps.
5. Decrease the heat and simmer for 2 minutes, then take away pan from heat. Add up half the cheddar and parmesan and mix till melted. Do not heat up or the oil will come out of the cheese.
6. Season with salt and white pepper and pour over the broccoli.
7. Unite the breadcrumbs with the residual cheddar and parmesan and shake over over the sauce. Grill under medium heat until the top is brown and fizzy. Serve up instantly.
